Lunch Box Idea 34: Light Summer Salad

This week sees the start of Wimbledon and I must say, this is my favourite time of year. I truly love Wimbledon and all it stands for in terms of being quintessentially British. I love the smart attire, the way the “Members” disappear off for lunch and afternoon tea. This year, unfortunately I won’t make it to Centre Court…

Nevertheless I am trying to keep one eye on the TV, the other on the computer, as I plough through the work *coughs* …

Now many a lunchtime and equally many an evening, the matches become so exciting, you just don’t want to miss one moment of the action on TV. You just want to grab that something quickly without falling into that trap of eating junk… So it’s always handy to have a salad idea or two up your sleeve for that emergency scenario… Particularly if you have your own brood of kids that all need feeding before witching hour, before food rage really kicks in and takes its grip. (In our household that really is not a pretty sight!)

So here’s a quick and easy light summer salad that you can rustle up in moments. Just make sure you’ve the staple ingredients in your cupboard.

Simple Summer Salad from Lunchbox World

Ingredients you will need:

Makes 1 salad

Ingredients

  •  1 little gem lettuce cut length ways
  • 15 grapes cut in ½
  • 1 stick of celery diced
  • 1 red apple diced
  • 2 tbsp crème fraiche
  • 1 tbsp low fat mayonnaise
  • 1 pear peeled and sliced
  • Handful of walnuts chopped
  • Lemon juice from ½ lemon

Method

1.      Mix the crème fraiche, mayo and lemon juice together in a small bowl

2.      Mix all the other ingredients together in a bowl and toss the dressing through

3.      Place into a serving plate and grate 30g mature lighter over the salad

And that’s it!

Now if you do have to feed others in your brood, then you will have to increase the quantities accordingly…

You’ll have to remind me.  I might share with you “The rabbit food recipe” my mother always served up during Wimbledon fortnight. Yes, at that time we were young and impressionable kids and we had to chomp our way through the rabbit food whilst she was firmly glued to the goggle box….
