Choice Char-grilled Courgette and Sun-dried Tomato Focaccia
So for the long name: Char-grilled or barbecued sun-dried tomato focaccia, spread with sun-dried tomato paste and topped with char-grilled courgettes, with a few cherry tomatoes and lots of grated PILGRIMS CHOICE Cheddar…

Ingredients you will need:
- 2 courgettes, thinly sliced diagonally
- 4 tbsp olive oil
- 1 focaccia loaf, cut into 4 pieces
- 2 tbsp sun-dried tomato paste
- 4 small bunches cherry tomatoes on the vine
- 150g (6oz) PILGRIMS CHOICE Extra Mature Cheddar cheese, grated
- Salt and freshly ground black pepper
- A few basil leaves
1 Pre-heat a char-grill pan on the barbecue. Brush the courgette slices with olive oil and chargrill or barbecue them in batches, turning once until cooked and lightly browned. Set aside.
2 Brush remaining olive oil over the cut sides of the focaccia, then char-grill or barbecue for a few moments until browned. Spread with sun-dried tomato paste.
3 Char-grill or barbecue the vine tomatoes for a few moments.
4 Place the focaccia onto 4 plates and top with the courgette strips and grated Cheddar. Top with the vine tomatoes and season to taste. serve immediately, scattered with a few basil leaves (ideally picked from your veggie patch).
If barbecuing, why not do more than you need and chill in airtight containers overnight, save them as leftovers for the next day…
For speed, try using char-grilled peppers from a jar instead of courgettes. Or try making your own veggie kebabs, alternate tomato with courgette with maybe mushrooms and onion slices, and gently grill on the barbecue – very tasty!
